Who is ready for the weekend!? I hardly ever know when its the weekend because the days just blend together for me here! Missing home dearly!
This is a very simple Italian meal for everyone to try! The Tomato pasta is Kevin's Grandma's and Mother's recipe! Its a great summer pasta because its a cold and light sauce!
Fresh Tomato Pasta
Serves: 2-3
Ingredients:
3-4 medium tomatoes
2 garlic cloves
2 basil leafs
1 Tablespoon olive oil
Dash salt
Dash pepper
parmesan cheese
2 Servings of spaghetti noodles
Directions:
1. Boil water for noodles. Once water is to a boil stir in noodles and boil until done. drain noodles but keep a 1/4 cup of noodle water.
2. Chop the tomatoes, garlic, basil.
3. Mix the tomatoes, garlic, basil, olive oil, salt, and pepper together in a small bowl to make a tomato sauce.
4. Mix the noodles with the 1/4 cup of noodle water to keep the noodles from sticking together and then mix in the tomato sauce.
5. Top with freshly grated parmesan cheese!
Crispy Chicken
Serves: 2
Ingredients:
2 chicken breasts
2 Tablespoons olive oil
2 Tablespoons bread crumbs
1/4 teaspoon basil seasoning
1/4 teaspoon cayenne pepper
dash salt
dash pepper
Directions:
1. Preheat oven to 375 F (190 C)
2. We do not have Italian seasoned bread crumbs, so we had to season the bread crumbs ourselves. Mix the bread crumbs with the basil, cayenne pepper, salt, and pepper in a small bowl.
3. Pour the olive oil in a separate small bowl.
4. Coat all sides of the chicken breast in olive oil, and then in the bread crumb mixture.
5. Place on a cooking sheet.
6. Bake for 25-30 minutes.
